In fine dining, gluten-free options often feel like an afterthought. Compromised in texture, flavor, and presentation. We knew it could be different. Pure Rise was created to challenge that standard with one core message. Creating a seat at the table for everyone. 

Our gluten-free products are crafted with the same rigor and artistry as traditional pastry. Cakes with tender crumb structure, cookies with depth and complexity, breads with solid flavor and airy crumb. We do not aim to be “great for gluten-free.” We aim to be GREAT.

Quality begins at the source. We partner with trusted premium suppliers and work closely with local companies to procure the finest flours, chocolates, dairy, fruits, and specialty ingredients available. Every ingredient is chosen intentionally. Every formula is tested meticulously. Every batch reflects our fine dining standards.

Pure Rise exists to redefine expectations for chefs, retailers, and customers alike. We are proud to offer products that are inclusive without compromise, refined yet comforting, and crafted with deep knowledge and technical excellence.

About the founders

Pure Rise was founded by Petra De Oliveira and Nathalie Vasquez, two pastry chefs united by heritage, fine dining discipline, and a shared belief that everyone deserves a place at the table.

Petra, half Brazilian and half Japanese, brings a perspective shaped by vibrant Brazilian flavors and the precision and refinement of Japanese craftsmanship. A graduate of the Culinary Institute of America, she refined her technique in professional fine-dining kitchens where excellence, detail, and consistency are non-negotiable.

Nathalie, proudly Peruvian, draws inspiration from Peru’s rich culinary legacy and bold ingredients. She trained at Le Cordon Bleu, where she developed the classical French foundation that now anchors Pure Rise’s pastry program. Her fine dining background brings depth, balance, and elevated technique to every product we create.

Together, we built Pure Rise with one core message: creating a seat at the table for everyone.
